Schlitterbahn’s Moms Ice Chest Challenge

Schlitterbahn New Braunfels not only allows families to bring in a cooler for free, they encourage it!  Through the park’s Moms Ice Chest Challenge, Schlitterbahn is spreading the word that guests are welcome to bring in an ice chest full of food and drink when they visit, and there’s plenty of room to enjoy picnics in the water park.
I was asked to share an ice chest-worthy recipe for this challenge, which proved to be tricky because I am a lazy picnic packer.  All of my go-to recipes require exactly one step. For example, frozen grapes (step 1: freeze grapes) and lemonade (step 1: empty a packet of powder into a bottle of water). I thought perhaps my Moms Ice Chest Challenge recipe should be slightly more inspiring. Like maybe two steps.

So here’s what I’ve got for you. DIY Lunchables.

Step 1: Go to the grocery store and let the kids pick several varieties of bite-size snacks. My boys like mini crackers, cheese cubes, lunch meat, blueberries and watermelon, carrot sticks and cucumber, and little cookies for dessert.

Step 2: Let the kids pack their own lunches from the choices available.  This part is particularly exciting for my 5 and 8-year-olds. They can’t wait to eat their beautiful lunches after they’ve packed them themselves.

Boom! Lunch in two steps.  I like “recipes” where the kids do all the work and they are excited to eat the finished product.
