This week’s must-try cocktail comes to us from Leonard Oliver and the fine folks at Vox Table. Vox, a New-American style restaurant located in the Lamar Union Community Complex in south Austin, offers a variety of American, French, and Spanish/Basque inspired dishes. Quaint, yet lively, Vox not only offers delicious, locally sourced small plates, but also a spirited craft cocktail bar with its own innovative menu to match. The whimsical names for their drinks — including ‘Tom Selleck’s Mustache,’ the ‘Danny Trejo,’ and the ‘#delicious’ — are enough to make you want to try the entire cocktail menu.
As expected, this week’s featured cocktail lives up to the expectations that Vox has accumulated since opening its doors last spring. Dubbed the ‘La Parkita’ by Oliver and crew, this drink is a spin on the classic Tequila Daisy, a simple, yet refreshing cocktail. ‘La Parkita’s’ complexity is arguably unmatched, taking your taste buds on a magnificent journey. Tart, light, and aromatic, with a smooth, sweet finish the ‘La Parkita’ is a truly spectacular cocktail, absolutely perfect for unwinding after a long summer work week.
