LOCAL CHEF DEMONSTRATION. For Pablo Gómez, who was born in Santander, along the northern coast of Spain, it is important to stay as faithful as possible to Spanish products and traditions. That, combined with a dedicated respect for food, a modern creative edge and a global approach to cooking and dining, inspired him to open his first restaurant, El Chipirón. He will share a few of his favorites with you tonight. Paella Class Menu:
