Cochon Heritage BBQ tour

Cochon Heritage BBQ tour’s second annual competition promoting heritage breed pigs and global grilling cultures challenges five Austin chefs to cook one whole, family farm-raised, heritage pig for a group of 20 notable judges. Chefs have seven days to prepare one whole pig and present a “Judge’s Plate” scored on utilization, global influences, cooking techniques and overall flavor. The winner in Austin will be crowned the “BBQ King or Queen” and takes home over $3,000 in prizes. A portion of the proceeds benefits Piggy-Bank.org while building opportunities for local food producers.
Competing chefs include Josh Jones of Salt & Time, Andrew Wiseheart of Contigo and Gardner, Sarah McIntosh of Épicerie Café & Grocery, Thai Changthong of Thai-Kun, and Quealy Watson of Hot Joy, San Antonio.
Attendees will be able to sample the competitor’s dishes, gain access to “BBQ Traditions”, a tasting within the event where 10 notable non-competing chefs prepare one dish from their favorite BBQ culture. As a whole, Cochon555 features 1,400+ pounds of heritage pig, “pop-up” culinary experiences, premium wines, artisan cheeses, sustainable seafood, hand-crafted spirits, fine cocktails, and a very impressive selection of whiskies, ryes and bourbon.
